South Tyrolian Nettle dumpling recipe

Ricetta dei canederli alle ortiche

Ingredients

500 g bread cubes (white bread)
500 g fresh nettles
5 eggs
125 ml milk
100 g onion, finely diced
2 cloves of garlic, finely chopped
a pinch of nutmeg
salt and pepper to taste
a little butter

Preparation

  1. Wash the nettles (wear gloves), blanch briefly (1–2 minutes), then rinse in cold water.
  2. Squeeze out thoroughly and roughly chop.
  3. Sauté the onion and garlic in butter or olive oil until translucent.
  4. Place the bread cubes in a large bowl.
  5. Add the nettles, onion, eggs, milk and seasoning, and mix well.
  6. Let the mixture rest for 20–30 minutes.
  7. Shape into dumplings.
  8. Gently simmer in salted water for about 10–15 minutes.
  9. Serve with grated Parmesan and melted brown butter.
