South Tyrolian Nettle dumpling recipe
Ricetta dei canederli alle ortiche
Ingredients
500 g bread cubes (white bread)
500 g fresh nettles
5 eggs
125 ml milk
100 g onion, finely diced
2 cloves of garlic, finely chopped
a pinch of nutmeg
salt and pepper to taste
a little butter
Preparation
- Wash the nettles (wear gloves), blanch briefly (1–2 minutes), then rinse in cold water.
- Squeeze out thoroughly and roughly chop.
- Sauté the onion and garlic in butter or olive oil until translucent.
- Place the bread cubes in a large bowl.
- Add the nettles, onion, eggs, milk and seasoning, and mix well.
- Let the mixture rest for 20–30 minutes.
- Shape into dumplings.
- Gently simmer in salted water for about 10–15 minutes.
- Serve with grated Parmesan and melted brown butter.
